Ingredients
- 1½–2 lbs. beef stew meat
- 4 cups beef broth
- 3 potatoes, peeled and cubed
- 3 carrots, sliced
- 3 ribs celery, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 3 Tbsp tomato paste
- 1 tsp dried thyme
- 1 sprig rosemary
- 1 Tbsp Worcestershire sauce
- 1 Tbsp olive oil
- Salt and pepper to taste
Directions
Heat the olive oil in a large Dutch oven over medium heat. Season the beef generously with salt and pepper, then brown it on all sides—about 5 to 7 minutes. Don’t rush this step; browning adds flavor.
Add the onion and garlic and cook for 2 to 3 minutes, until softened and fragrant. Stir in the tomato paste and mix until the beef is well coated.
Add the potatoes, carrots, celery, thyme, rosemary, Worcestershire sauce, and beef broth. Stir to combine all ingredients.
Bring the stew to a gentle boil, then reduce the heat to low. Cover and simmer for 1½ to 2 hours, stirring occasionally, until the beef is tender and the vegetables are soft.
Taste and adjust seasoning with additional salt and pepper as needed.
Serve hot with crusty bread or crackers for a cozy, satisfying meal.
