Cranberry-Swirled Cornbread Muffins for a Central Florida Thanksgiving

Every Thanksgiving table has its favorites—the dishes everyone looks forward to year after year. But sometimes it's fun to add a little something unexpected to the lineup.

These cranberry-swirled cornbread muffins bring two familiar holiday flavors together in one pretty little package. Tender cornbread and bright, tart cranberry sauce make a colorful addition to the bread basket, whether you're hosting a crowd or bringing a dish to share.

And here's the part I love: they're made with whole-berry cranberry sauce, so there's no separate cranberry filling to prepare.

Cranberry-Swirled Cornbread Muffins

Yield: Approximately 20–22 muffins
Prep time: 15 minutes
Baking time: 15–18 minutes
Oven: 350°F

Ingredients

  • 2 cups all-purpose flour
  • 1 cup cornmeal
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ¼ teaspoon kosher salt
  • 4 large eggs
  • 1 cup milk
  • 1 cup unsalted butter, melted and allowed to cool slightly
  • 1 cup whole-berry cranberry sauce

Directions

  1. Prepare the pan. Heat the oven to 350°F and line standard muffin pans with paper liners.
  2. Mix the dry ingredients. In a large bowl, whisk the flour, cornmeal, sugar, baking powder, baking soda, and salt together.
  3. Combine the wet ingredients. In a separate bowl, whisk the eggs and milk. Slowly mix in the slightly cooled melted butter.
  4. Make the batter. Add the wet mixture to the dry ingredients and stir gently until no large dry patches remain. Avoid overmixing.
  5. Add the cranberry swirls. Spoon about 2 tablespoons of batter into each liner, followed by about 1 teaspoon of cranberry sauce. Swirl lightly with a toothpick. Repeat with another layer of batter and cranberry sauce, leaving the cups roughly two-thirds full.
  6. Bake. Bake for approximately 15–18 minutes, until the tops are set and a toothpick inserted into the cornbread portion comes out clean. Let the muffins cool slightly before serving.

A Little Holiday Serving Inspiration

Arrange the muffins in a bread basket for Thanksgiving dinner, or serve them warm with a little butter at a holiday brunch. Their ruby-red swirls make them especially pretty on the table.

If you're considering making them for guests, November 12 gives you a lovely head start—plenty of time for a trial batch before Thanksgiving!
