Zesty Corn & Black Bean Salad

Ingredients

• 2 cups corn kernels
• 1 can black beans, drained and rinsed
• 1 red bell pepper, diced
• 1 avocado, diced
• 2 Roma tomatoes, diced
• 3 green onions, sliced
• 2 tablespoons chopped fresh cilantro
• 1/4 cup olive oil
• 2 tablespoons fresh lime juice
• 1 clove garlic, minced
• 1/2 teaspoon salt
• Pinch of cayenne pepper

Instructions

In a large bowl, combine the corn, black beans, bell pepper, avocado, tomatoes, green onions, and cilantro.

In a small bowl, whisk together the olive oil, lime juice, garlic, salt, and cayenne pepper. Pour the dressing over the salad and toss gently to combine.

Chill until ready to serve. This salad is especially good served cold, so it is an easy one to make a little ahead of time.

Easy Serving Ideas
