Cucumber Avocado Salad with Lime & Feta
This crisp and creamy salad is perfect for hot days. It’s hydrating, healthy, and full of bright flavor from lime and cilantro.
Ingredients
- 2 large cucumbers, sliced thin
- 1 ripe avocado, diced
- 1/4 cup crumbled feta cheese
- Juice of 1 lime
- 1 tablespoon olive oil
- 2 tablespoons chopped fresh cilantro
- Salt and pepper to taste
Directions
- In a large bowl, combine the sliced cucumbers and diced avocado.
- Add the crumbled feta cheese and chopped cilantro.
- In a small bowl, whisk together the lime juice, olive oil, salt, and pepper.
- Pour the dressing over the salad and gently toss to combine.
- Serve immediately or chill for 15 minutes before serving for an extra refreshing taste.
