🍍 Tropical Fruit Gelatin Bites – Taste the Colors of Summer

Looking for a refreshing treat that’s colorful, healthy, and easy to make? These Tropical Fruit Gelatin Bites are a perfect no-bake snack for sunny days. Packed with mango 🥭, pineapple 🍍, and coconut milk, they’ll transport you straight to the islands — no plane ticket required!

Before you begin, this article will help you choose the best possible fruit for this or any other recipe.

🛒 Ingredients:

  • 1 cup fresh mango, diced. 
  • 1 cup fresh pineapple, diced
  • 1/2 cup canned coconut milk (full-fat)
  • 1 tablespoon unflavored gelatin (learn about the health benefits of gelatin!)
  • 1 tablespoon honey or sweetener of choice
  • 1 teaspoon lime juice

👩‍🍳 Directions:

  1. Dice the mango and pineapple into small pieces and set them aside.
  2. In a small saucepan, combine coconut milk and honey. Warm over low heat (do not boil).
  3. Sprinkle unflavored gelatin over the warm liquid and stir until completely dissolved.
  4. Remove from heat and let cool for a minute, then stir in the lime juice.
  5. Evenly distribute the diced fruit into a silicone mold or shallow tray.
  6. Carefully pour the gelatin mixture over the fruit until fully covered.
  7. Place in the fridge ❄️ for 2–3 hours or until completely set.
  8. Pop out the bites or cut into cubes. Serve chilled and enjoy your tropical escape!
