🍍 Tropical Fruit Gelatin Bites – Taste the Colors of Summer

Looking for a refreshing treat that’s colorful, healthy, and easy to make? These Tropical Fruit Gelatin Bites are a perfect no-bake snack for sunny days. Packed with mango 🥭, pineapple 🍍, and coconut milk, they’ll transport you straight to the islands — no plane ticket required!
Before you begin, this article will help you choose the best possible fruit for this or any other recipe.
🛒 Ingredients:
- 1 cup fresh mango, diced.
- 1 cup fresh pineapple, diced
- 1/2 cup canned coconut milk (full-fat)
- 1 tablespoon unflavored gelatin (learn about the health benefits of gelatin!)
- 1 tablespoon honey or sweetener of choice
- 1 teaspoon lime juice
👩🍳 Directions:
- Dice the mango and pineapple into small pieces and set them aside.
- In a small saucepan, combine coconut milk and honey. Warm over low heat (do not boil).
- Sprinkle unflavored gelatin over the warm liquid and stir until completely dissolved.
- Remove from heat and let cool for a minute, then stir in the lime juice.
- Evenly distribute the diced fruit into a silicone mold or shallow tray.
- Carefully pour the gelatin mixture over the fruit until fully covered.
- Place in the fridge ❄️ for 2–3 hours or until completely set.
- Pop out the bites or cut into cubes. Serve chilled and enjoy your tropical escape!
